It seems, after doing some more research, that there is an incompatibility with the Mercury mail server and PHP's MAIL function when used with a Bcc field.  Everything works fine if you don't send messages with Bcc, but if you DO, you get extra brackets encapsulating the email address:

<"Username" <useremail@emailaddress>>

I spent a couple of hours on it yesterday and there's just no way to make it work, near as I can tell...
